Number of Servings: 6

Ingredients

    1-1/2 cup red ripe tomatoes, chopped or sliced
    1/2 cup green peppers, chopped
    1/3 cup lemon juice
    1 tbsp olive oil
    1/2 tbsp onions, chopped
    1 tbsp basil, leaves
    1/4 tbsp pepper, black
    Dash of Tabasco sauce (to taste)
    1-1/2 tsp salt
    32 oz Tilapia fillets
    Green pepper rings for garnish

Directions

Heat oven to 500 degrees.
Place fillets in single layer in baking dish, 13-1/2 x 9 x 2 inches.
Stir together remaining ingredients except pepper rings; spoon over fillets.
Bake 5 to 8 minutes or until fish flakes easily with fork. Remove fillets to warm platter.
Garnish with green pepper rings.

    Incredible!
    This recipe was delicious! I made it without the olive oil to take away a little of the fat and it still tasted great. I am not a fan of a fishy taste and this definately masks it. - 8/27/08

    I have made this several times. I usually bake it at 425 or wrap it in foil and throw it on the grill. I don't care for fish but this recipe gets rid of the fishy taste and smell. I will make again and again. Husband loves it! - 3/24/07
