Ingredients

    3 LARGE Bushel Boy Beefsteak Tomatoes
    1 Raw Medium-Large White Onion
    1 Bundle Green Onion
    2 Large Jalapenos
    1 Large Lime Juiced
    1 Medium-Large Bulb Garlic Crushed 10 Cloves
    1/8-1/4 tsp Cilantro
    1 tsp Salt
    1 tsp Ground Black Pepper


Directions

Hand chop everything.
Look for firm fat red tomatoes.
White onion should have paper-like outer skin.
Jalapenos -smooth are milder, twisting and pocked are hotter.
Lime should be large and fraguent, microwave 20-30 seconds prior to juicing to get fruit really pliable.
Garlic tip: Larger garlic for hotter peppers, smaller for mild.
Cilantro can overpower if not mixed, start off small and add to taste sparingly.
Salt and Pepper to taste.

**Rinse everything! Chop ingrediants and cover in Lime Juice, then add garlic, cilantro, salt and pepper. Mix gently and refridgerate. Good for up to two weeks. Canning: Bring contents to boil stirring often then simmer for 30 minutes. Cold water bath 30 minutes leaving 1/2" headspace -check your altitude for exact process times. Use up to 1 year. Canning does change the taste.
