Ingredients

    1 15 oz can Black Beans
    1 15 oz can Red Beans
    * 1 cup chopped onion
    * 2-3 garlic cloves, minced
    * 1/2 tablespoon cumin
    * 1 tablespoon chili powder
    * 1/2 teaspoon cinnamon
    1 12 oz beer
    * 1 (28 ounce) can diced tomatoes
    * 2 tablespoons tomato paste
    * 2 chipotle chiles in adobo
    * 1.5 lb butternut squash, cubes (weight after peeling)
    * cilantro (to garnish) (optional)
    *salt, pepper to taste.

Directions

Soften the onions in a hot pot. Add garlic and cook for a couple of minutes. Add all spices, and mix. Add beans, tomatoes, beer. Simmer for 20 minutes. Add Squash, cook until tender, stirring occasionally. Makes 10 servings.
