Introduction

Number of Servings: 4
Ingredients

2 cups fresh green beans - cut into 3-4" pieces
2 cups fresh ripe tomatoes - cut into bite-sized pieces
3 hard boiled egg whites
1-1/2 hard boild egg yolks (optional)
12 Greek olives (Kalamata)
1/2 can albacore tuna (water-packed)
2 Tbs chopped parsley
1 Tbs Olive Oil
1/2 Tbs Red Wine Vinegar
salt & pepper to taste
Directions
1. Steam the beans lightly (3 minutes)... they should still be crisp.
2. Chop tomatoes, eggs, olives, and parsley. Add to steamed beans in a medium sized bowl.
3. Add the tuna.
4. Mix the oil, vinegar and salt/pepper in a small bowl. Toss with salad.
NOTES:
-You may like a little more dressing, depending on taste.
-Although the tuna adds lean protein, we all agreed that it would be better without. But, being true to the book, we had to put it in. If you're not a tuna fan, it would be fine without.
