Ingredients

2 Tbsp. olive oil (EVOO)
1 lb. ground turkey
3 c. eggplant (peeled and chopped or sliced)
3 c. marinara sauce (canned or homemade)
1 bell pepper (chopped)
2 celery stalks chopped
1 onion chopped/diced
2 c. fresh spinach (steamed)
2 qt. casserole dish
Directions
Preheat oven to 375 degrees. Brown ground turkey, drain set aside. Saute onion and celery and green bell pepper in 2 T. olive oil, add ground turkey and set aside. You can use canned spaghetti sauce or use your own. Peel eggplant and either slice discs or chop in cubes. Steam spinach while preparing dish.
Layer spaghetti sauce, ground turkey, eggplant, vegetable saute and then steamed spinach. Repeat layers until reaching the top and spaghetti sauce should be the last item. Cover dish and bake for 45 minutes.
To garnish, sprinkle parmesan cheese or use part skim mozzarrela cheese. This can be frozen and reheated. Makes an EXCELLENT dinner dish. Serve with a spinach salad.
