Number of Servings: 2
Ingredients

1/2 cups Canned Chicken Breast Or Shredded Cooked Chicken
2 Tablespoons Light Mayonnaise
1/4 teaspoons Garlic Powder
1 dash Black Pepper To Taste
2 dashes Celery Salt, To Taste
2 leaves Green Leaf Lettuce
2 leaves Red Cabbage
2 Tablespoons Shredded Parmesan Cheese
Directions
Wash lettuce and cabbage, pat dry. Set one lettuce leaf on each plate, top each with a cabbage leaf.
In a bowl, mix chicken, mayo, garlic powder, pepper, and celery salt. If using canned chicken, be sure to drain it first!
Split chicken mixture evenly between the two plates, and place each half on the cabbage leaves.
Top each with 1 tablespoon of parmesan.
Roll each up, burrito style, securing with a toothpick if desired.
Serve!
A note for those on low carb diets: even if you end up eating both servings yourself, it still comes in at right under 10 carbs. Not that I would know from experience or anything. *ahem*)
For those NOT on low carb diets: feel free to add a tomato or carrots or anything else your little heart desires.
