Introduction

Ingredients

1 lb fava beans, rinsed, sorted & soaked overnight
1 C reduced fat feta cheese
4-5 hard boiled eggs, chopped ( or more depending on the number of people and your taste)
1 med bunch fresh cilantro, rinsed & chopped
4 cloves garlic, minced
1 small red onion, minced
optional: hot green chilie, chopped
Directions
Cook beans 1-2 hours on stove until tender OR cover in 2 in water & cook in slow cooker on low 8 hours
Boil eggs and peel once cool
When beans are tender, mash them with a little of the liquid
Add the cheese, egg, garlic, onion, & cilantro
Mix and serve with whole wheat flatbread
Note: if desired, serve the "toppings" (cheese, egg, cilantro, etc) on the side for people to add as they like, also good with hot sauce like Cholula
