Ingredients

    2 c red lentils
    1 lg onion, diced
    1 T oil
    2 T curry paste
    1 T curry powder
    1 tsp turmeric
    1 tsp cumin
    1 tsp chili powder
    1 tsp salt
    1 tsp sugar
    1 tsp garlic
    1 tsp ginger
    1 14 oz. can tomato puree

Directions

Wash lentils, Cover with water; Simmer until tender.

Carmelize onions.
Combine spices, add to onions. Cook 1-2 minutes. Stir in tomatoes. Simmer until lentils are done.

Drain lentils. Mix with curry. Serve with rice
