Ingredients

8-9 eggs
1 cup cheddar cheese
3-4 tablespoons pesto
5-6 red potatoes diced
2 tbsp. garlic (or several cloves)
several tablespoons balsamic vinegar to taste
1 small vidalia (or other) onion)
Salt and pepper to taste.
Directions
Heat oven to 375
Cook Potato, onion, garlic in cast iron (or oven proof) frying pan until potatoes are fully cooked and browned a bit.
Beat eggs, cheese, pesto, balsamic in separate bowl.
Once potatoes are fully cooked pour egg mixture directly over them and using a fork gently spread mixture in and among the potatoes.
Let cook a minute or so on stove top so bottom of eggs heat, then transfer to oven. Let bakr in oven uncovered until top of frittatta is browned and egg mixture is cooked through solid.
Take out of oven, slice into eight slices and serve.
Serving Size: Makes 8 slices
