Ingredients

2 cans brown lentils, drained and rinsed
1 4oz package (1 cup) crumbled goat cheese (or feta)
1 large cucumber, peeled and diced
1 large red tomato, diced
1 medium red onion, diced
1/2 cup balsamic vinegar
2 packages Good Seasons cheese and garlic salad dressing mix (or basil vinaigrette if preferred)
2 tbsp Smart Balance Omega 3 cooking oil
3 tbsp water
Directions
Rinse and drain the lentils, then place in large bowl. Add the cucumbers, tomato and red onion, tossing just until mixed. Set aside.
In a cruet or container with lid, add the 2 packets of salad dressing mix to the vinegar and water, then shake vigorously until mixed. Add the smart balance oil and shake well.
Add the dressing to the lentil mix until lightly coated. Toss gently, then add the goat cheese and toss again until mixed. Add remaining dressing to taste.
Chill in fridge for at least 1 hour for best taste.
Serving Size: makes 12 - 14 1/4 cup servings
