Ingredients

    4 eggs
    2 cups crumbled cooked farmer sausage
    1\2 raw pepper
    1\2 raw onion
    2 tbsp. whole wheat flour
    1/2 cup milk
    1\2 cup shredded cheese
    1\2 cup salsa

Directions

Crumble farmer sausage and saute with onions and pepper. In bowl whip the eggs, milk and flour. Pour mixture into 9 x 12 cookie sheet lined with parchment paper and sprayed with pam. Spread farmer sausage over egg mixture and bake for 15 minutes in 350 oven. When eggs are set spread cheese on omelet and roll up with the parchment paper. Slice and serve with salsa.
