Ingredients

    1/4 cup of Splenda brown sugar
    2 tsp. ground spices you like (e.g., cinnamon, ginger, nutmeg, cloves)
    dash of salt
    2 eggs
    15-oz. can of pumpkin
    12-oz. can of fat free, evaporated skimmed milk

Directions

Mix the sugar and spices together in a large bowl. Stir in the pumpkin. Add the eggs one at a time. When they are incorporated, stir in the evaporated milk until the entire mixture is blended. Pour the mixture into small ramekins or into a shallow baking dish. Bake the pudding for about 40 minutes in a 350 degree oven. The center should be slightly jiggly.

This makes 8 servings; 100 calories per serving.
