Mushroom-Potato Soup with Smoked Paprika
Recipe adapted from "Sunset" ...Smoked paprika adds a deep woodsmoke flavor to this soup. Prep and Cook Time: 1 hour. Button or cremini mushrooms work well in this soup, but try shiitake, oyster or mitake. We used a mix of dried mushroom in place of the porcini and we have used uncured turkey bacon in place of pancetta.
While taste-testing the first time we made this recipe, we were concerned that it wasn't turning out well. The paprika was overwhelming while cooking. But when the soup is done and served with the yogurt, it all comes together beautifully.
