Ingredients

1 tbls olive oil
2 leeks, white and light green parts
1/2 cup onion chopped
1/2 tsp sea salt
3 cloves garlic finely chopped
2 large russet potatoes diced
2 cups chopped mushrooms
2 14oz cans chicken broth
2-3 tsp chopped fresh rosemary
Directions
Heat oil in a large pan over medium heat.
Saute onion and leek and salt for 5 minutes stirring often.
Add garlic and stir. Cook one more minute.
Add potato
, mushrooms and chicken broth, cover and bring to a boil. Simmer 20 minutes.
Remove from heat, add rosemary. Blend with an immersion blender.
Makes 6 cups.
