Ingredients

    1 tbsp Olive Oil
    1 Onion, medium, chopped
    5 oz dried Oyster Mushrooms, rinsed
    6 cups Vegetable Broth
    1/2 tsp Thyme, dried
    1/2 tsp Salt
    3tbsp Nutritional yeast
    dash Pepper

    1. Heat Oil in a saucepan over med-high heat, add onions & saute until tender and golden broth, 5 min.

    2. Add mushrooms, potatoes, broth & thyme and bring to a simmer. cover, reduce heat to low and simmer until potatoes are tender, about 10 min.

    3. Puree soup in blender ( batches) until silky smooth. Return to pot and heat to a simmer. Season with salt & pepper.

    Serves 6
