Ingredients

    6 cups fresh spinach, broken up into medium-sized pieces
    1 green onion, chopped
    2 hard-boiled eggs, chopped
    3 slices bacon, cooked and crumbled
    1/3 cup olive oil
    2 tbsp red wine vinegar
    2 tsp soy sauce
    1 tsp black pepper
    1 tsp dry mustard
    1-2 tsp sugar or sugar substitute

Directions

Toss first 4 ingredients in large salad bowl. If desired, sprinkle with lemon juice to keep from wilting.

Mix remaining ingredients (except sugar). Taste - if too tart, add a little sugar to taste. Pour over salad and serve.
