Ingredients

    2 egg whites
    4 tablespoons oat bran
    2 tablespoons fat-free plain Greek yogurt
    2 tablespoons fat-free ricotta
    Zest of ½ small lemon
    1 teaspoon zero-calorie sweetener, such as Stevia.

Directions

In a small bowl, beat the egg white until foamy. In a separate bowl, combine the oat bran, Greek yogurt, ricotta, lemon zest, and sweetener. Add the beaten egg white and mix until blended. Place a small nonstick pan over medium heat. Pour the pancake mixture into the pan and cook for around 5 minutes, or until the underside is golden and the upper side starts to dry. Flip the galette carefully (they are fragile at this stage) with a spatula and continue cooking the other side for an additional 5 minutes. Remove to a plate and allow to cool briefly before serving.

You may use two whole eggs in place of the egg whites if cholesterol is no concern.
For a treat, cover the top with no-fat no-sugar whipped cream substitute (from a spray can or tub).

    Are you sure the calories per galette is 40 for this recipe? The original galette is over 100 cals and has less ingrediants so how can this be lower and it contains cheese? - 3/12/13

    Very Good
    I made it with whole eggs, and it was pretty tasty. The lemon zest really made it work. Don't stint on the zest! - 9/18/11
