Ingredients

    6 cups water
    1 cup of chopped celery (120 g)
    1 cup dried green split peas (200 g), rinsed and picked over
    1/2 cup diced shallots (65 g)
    6 2-inch red-skinned potatoes, chopped (370 g)
    2 tsp. salt (or to taste)
    1/4 tsp. ground black pepper (or to taste)
    1/4 tsp. liquid smoke (or to taste)
    1/4 tsp. lemon juice (or to taste)

Directions

Put water, celery, split peas, shallots, and potatoes in slow-cooker and cook on low for 8 hours. Carefully puree soup in small batches in a blender (or use an immersion blender). Season with salt, pepper, liquid smoke, and lemon juice to taste.

Serving Size: Makes 4 2-cup servings
