Introduction
This Carribean inspired dish makes for a beautiful presentation! Ingredients

2 bell peppers, sliced thin like for fajitas (red & yellow/orange)
2 onions, halved and sliced thin
2 ribs celery, sliced thin on the diagonal
2 Can (16 ounces) black beans, drained and rinsed (or 4C fresh cooked)
1 can diced tomatoes (fire roasted are great!)
1T minced garlic
1t onion powder
1t ground ginger
1/2 t salt
1/4 t ground coriander
1/8t ground cloves
1/8t ground allspice
Directions
1. Spray a large saucepan with EVOO spray and begin to sautee the bell peppers, onions and celery. Give them about 10 minutes on medium heat - they should be fairly tender and quite a bit melted down by the time they're done.
2. Add the tomatoes, beans and all the spices. Simmer for about 10 more minutes or until the sauce is thick and the spices are blended. Now it's ready to serve!
Serving suggestions (extra ingredients not included in calorie count)
1. Serve as-is over brown rice with a steamed green veggie
2. Make a delicious vegetarian taco. REPLACE the ginger with some cumin and oregano for a more mexican flavor, and serve in a whole wheat tortilla with fresh diced tomatoes, lettuce, cheese, salsa & sour cream. Add a spoonful of rice to complete the protein.
3. Serve cold over salad greens with some diced cooked ham.
