Introduction

Number of Servings: 2

Ingredients

    Bay Leaf, 1 tbsp, crumbled (remove)
    Chili powder, 1 tbsp (remove)
    Pepper, black, 1 dash (remove)
    Salt, 1 dash (remove)
    Garlic, 2 clove (remove)
    Onions, raw, 3 large (remove)
    Canned Tomatoes, 2 cup (remove)
    Red Ripe Tomatoes, 2 large whole (3" dia) (remove)
    Beef chuck, 400 (remove)
    Brown Rice, long grain, 1 cup (remove)

Directions

Preheat oven to gas mark 5.

Season and fry the Beef in a little oil and chopped garlic until seared and brown.

Chop onions into quaters and spread out in a medium/large baking dish.

Pour seared beef into the baking dish and spread out.

pour in the tinned tomatoes, chilli, salt & pepper bay leaf and some roughly chopped garlic chunks.

Cover with foil and cook slowly in the oven.

Dry fry the mushrooms (finely chopped), Boil rice until soft, then drain thoroughly (I usually pour boiling water over my freshly cooked rice to get rid of any starch) & mix the mushrooms and rice together.

Make a bed of rice on a plate, spoon on lashings of the Beef Stiffado allowing plenty of Onions for each plate.

Viola......
