Introduction
This is not a poultry recipe per se, but there;s no egg & cheese category in the recipe categories. I modified the recipe from the 1500-Calorie-a-Day Cookbook by Nancy Hughes, McGraw-Hill 2009. I changed a lot from the Mini Ham & Potato Quiches recipe on page 14 to match what I had in my house. Ingredients

6 large eggs & 6 egg whites (Total 2 C. egg product )
4 C frozen/refrigerated shredded pototoes
12 pcs. turkey bacon, cooked & diced
6 triangles of light laughing cow
3.5 oz. shredded cheddar
1 c. chopped onion
Directions
Preheat oven to 350 F
Coat nonstick muffin tins with cooking spray
Beat eggs, then combo all ingredients EXCEPT cheddar until well blended.
Spoon equal amounts of mixture in muffin cups .
Bake 15 minutes or til egg sets. Sprinkle evely with cheddar & bake 2 minutes more or til cheese melts
Remove from oven and let cool 5 minutes before serving.
