Introduction

I modified a low-fat zucchini bread recipe to suit my tastes. Egg substitute, half the sugar, extra cinnamon, and pecans make this bread a real healthy treat. Ingredients

    1 cup egg substitute
    1/2 c melted Smart Balance Lite spread
    1 TBSP vanilla
    1 c sugar
    3 c all-purpose flour
    1 tsp soda
    1 tsp baking powder
    1 TBSP cinnamon
    2 c grated zucchini with skin

    Optional:
    1/2 c chopped pecans
    1/2 c raisins

Directions

Pre-heat oven to 350. Spray two loaf pans with Pam spray.

Mix eggs, melted butter, and vanilla in a large bowl.

Add rest of ingredients and mix well.

Pour into Pam treated loaf pans.

Bake 60 minutes in pre-heated oven.

Serving Size: Makes two loaves, each sliced into 12 slices
