Introduction

Ingredients

1-1/2 cups of unbleached, all purpose plour
1-1/4 tsp. baking soda
1 tsp. salt
2 tsp. pumpkin pie spice
1 can of pumpkin puree (I use Libby's)
1 cup firmly packed brown sugar
1/2 cups fat free buttermilk
1 large egg
1 Tbsp. canola oil
1/4 cups semisweet chocolate chips
Directions
1) Preheat oven to 350 degrees.
2) Spray loaf pan with nonstick cooking spray.
3) Mix the flour, baking soda, salt, and pumpkin pie spice together in a small bowl.
4) In a large bowl beat the pumpkin puree, brown sugar, buttermilk, egg, and oil together. I do it by hand but you could use an electric mixer.
5) Add the dry ingerdients to the wet gradually, stirring until just moistened, do not over mix.
6) Fold in the chocolate chips.
7) Pour into loaf pan and bake for 1 hour.
By the way...I just used a normal loaf pan, like what most people would use to bake bread in.
