Ingredients

    These amounts are per serving:

    1/4 cup parsnip "chips" (thinly sliced rings)
    1/4 tsp extra virgin olive oil
    1/4 tsp lemon pepper (such as Trader Joe's Lemon Pepper or McCormick California Style Lemon Pepper with Garlic & Onion)

Directions

Toss parsnips with oil and lemon pepper. Place in single layer on baking sheet. Bake at 375 degrees until lightly browned and crisp (watch closely; they may take anywhere from 15-45 minutes, depending on the amount, the thickness of the slices and your oven).

    These were really yummy! I didn't have lemon pepper, so I just sprinkled on some Red Robin seasoning. Take the time to wait unti l they are crispy. I was a little impatient and some of mine weren't really "chips" but they were still great! - 1/24/08
