Introduction

Ingredients

    Sweet Potato Layer:
    2-Cups Sweet Potatoes (Peeled and Mashed)
    1/4 Cup Butter
    1/4 Cup Milk
    2 Eggs
    1-TSP Vanilla
    1 Cup Sugar

    Top Layer:
    1/2 Cup Butter
    1/2 Cup Sugar
    1/4 Cup Flour
    1 Cup Crushed Pineapple (drained)
    1 Egg (beaten)

Directions

Mix ingredients for sweet potato layer and put in 1-1/2 to 2 qt cassarole dish. For the top layer, melt butter in saucepan, mix flour and sugar and add to butter. Add pineapple and egg. Pour over sweet potatoes mixture. Bake 30-40 minutes at 350 degrees.
