Ingredients

    Butter, unsalted, 1/2 cup
    Granulated Sugar, 1 cup
    Eggs, 2 large
    Gluten free flour, 1 3/4 cups
    Baking Powder, 1 1/2 tsp
    Salt, 1/2 tsp
    xantham gum, 1 tsp
    Milk, 2%, 1 cup
    Vanilla Extract, 1 tsp
    Almond Extract, 1/2 tsp

Directions

Preheat oven to 325 degrees.
Grease or paper line 24 mini cupcake tin.
In a large bowl cream butter, eggs and sugar until smooth.
In a mixing bowl combine salt, flour, baking powder, and xantham gum.
In another bowl mix milk, vanilla, and almond extract.
Add dry ingredients and milk mixture slowly to butter. Once smooth divide into muffin cups. Bake for 25-35 minutes until golden brown.

Serving Size: Makes 24 mini cupcakes
