Ingredients

    Brocolli - approx 2.5 cup
    Cauliflower - approx 2.5 cup
    Onion - approx 1 cup
    Garlic - 1 clove
    Potato - approx a pound or 500 g
    Veggie broth - about 4 cups (homemade is best!)
    Water - optional, use if too thick!
    Half-fat cream of brocolli soup - 1 can
    Cheddar cheese, shredded - 1 cup or less
    mushrooms - 1 cup

Directions

Sautee the onion and garlic in some of the vegetable broth. Add other vegetables (except mushrooms!) and the rest of the broth. If too thick, add some water. Boil and cook for about 15 minutes, until they are soft. Once the vegetables are cooked, blend with a hand blender or a blender in batches. Add the can of soup, cheese and mushroom and heat through.
