Introduction

Ingredients

    Orzo pasta (16 oz)
    Chicken, 3 c diced
    red pepper, 1 medium, diced
    green onions, 3, sliced
    sugar snap peas (10 oz frozen bag)
    Vegetable Oil (1/4 c)
    Hoisin Sauce (4 T)
    Rice Wine Vinegar (4 T)
    Soy Sauce (4T)

Directions

Cook orzo according to package directions. Cook snap peas according to package directions, drain and cool. In a large bowl, place the chicken, peppers, peas, and onions. Mix sauce ingredients together. Top with 2 oz. roasted sliced almonds. (Spread almonds on a cookie sheet in a single layer and toast at 350 for 6-10 minutes, or until golden brown.) Sprinkle on top of salad. I could't find Rice Wine Vinegar. I just used rice vinegar.
This recipe is best made at least 24 hours in advance. The longer the ingredients marry together, the tastier it is!!
