Number of Servings: 4

Ingredients

    1 large navel orange
    3.5 tbsp. low-sodium tamari (soy) sauce
    1 tsp. cornstarch
    4 tsp. minced garlic
    2 tsp. minced ginger
    1 tsp. Splenda
    2 medium scallions, sliced
    1 tbsp. sesame oil
    14 oz. medium shrimp, raw, shelled w/tails on (about 24 shrimp)
    3.5 c. fresh snow peas
    1 can water chestnuts




Directions

Zest and juice the orange into a small saucepan. Add Tamari, cornstarch, garlic, ginger, Splenda, and scallions.Cook over low heat for 5 minutes, stirring frequently. Set aside.

Heat oil in large skillet or wok. Add shrimp and stir-fry until just slightly under-cooked. Remove and set aside. Stir-fry snow peas until tender crisp; add in water chestnuts, shrimp and sauce. Mix thoroughly and continue cooking until sauce is thickened and shrimp are cooked through.

Serve over brown rice (not included in nutrition calculations).

Serving Size: Makes 4 servings (about 6 shrimp/person)
