Introduction

I'm always looking for new ways to cook rice, and this one is very creamy. I'm always looking for new ways to cook rice, and this one is very creamy.
Number of Servings: 3

Ingredients

    Brown Rice, long grain, 1 cup
    Water, 1.5 cup
    coconut milk, 1 cup
    Pineapple, fresh, 1 cup, diced

Directions

This is really easy. Rinse your rice.

Bring 1.5 cups of water to a boil. Add coconut milk and let return to a boil. Add rice, cover, and reduce heat. Let simmer for 45 minutes.

When there's about 10 minutes left to spare, quickly (so as not to lose too much steam and heat) add the pineapple. When done cooking, stir and serve.

Get creative and look for other options to season the rice than pineapple. Consider apples and pie spices, sweet squashes, or cinnamon and raisins.

    I made this tonight, I used white rice instead (it's what I had). Nice flavor, but wasn't what I expected. My family said they would prefer it as a dessert, like rice pudding, rather than a side dish. It seems to make a lot more than 3 servings too. I will make this again though. - 1/16/09
