Introduction

For use over rice or other cooked grains. For use over rice or other cooked grains.
Number of Servings: 10

Ingredients

    Rice Vinegar, 1/2 cup
    Rice Wine, 1/2 cup
    Daikon
    Baby Carrots, 7 medium
    Organic cane sugar, 1 tsp
    Ginger Root, 1 tbsp

Directions

Use a jar that will hold 1.5-2 cups of liquid.

Cut baby carrots into matchsticks, and place in jar.

Peel and dice a 1inch roundish chunk of ginger root, and place in jar.

Chop daikon into matchsticks until jar is full.

Add the pinch of cane sugar.

Add the wine and vinegar.

Close and shake well, then leave in refrigerator at least overnight.

Use over any cooked grain as a seasoning.

I made this up myself. :) As you can see, the calories are negligible so don't get hung up on quantity and that your jar and mine are probably different sizes.
