Ingredients

    7 medium size beets
    Apricot Jam, 1 tbsp
    Orange Juice Plus Calcium with Vitamin D, 1/4 cup
    Butter, unsalted, 2 tbsp
    Extra Virgin Olive Oil 1 Tbsp
    Salt and Pepper to taste

Directions

Place beets in large pot of boiling water for 15 minutes. Drain and allow to cool to the touch. Remove skins by rubbing with a paper towel. Slice about 1/4 inch thick. Warm remaining ingredients in a large pan over medium heat. Add beet slices, making sure each one is coated in the sauce. Cook until al dente and serve warm or store in the refrigerator and serve cold the next day.
