Introduction
I was so sick of salads - so I wanted to create something a little different. This slaw has a definite kick to it as the recipe stands. Add or take away heat as you desire. Awesome with a blackened chicken or as a topping for a fish/shrimp taco. I was so sick of salads - so I wanted to create something a little different. Ingredients
-
1/2 head green cabbage, shredded
1/2 head red cabbage, shredded
1 small sweet onion, sliced thin
2 jalapenos, seeded and chopped
1 clove garlic, finely minced
3 tbsps fresh cilantro, chopped
4 tbsps rice vinegar
juice of 2 limes
zest of 2 limes
3 tbsps mayob
cumin, salt and pepper to taste
Directions
Mix all together and chill. I dished mine out into 6 smaller tupperware containers so I could grab one quickly when packing lunch for work. Awesome with chicken, shrimp, or fish.
Even better the next day after the flavors have married together in the fridge.
The next time I make this I will probably cut the mayo down to 1 tbsp. The mayo just helps cut the acidity of the lime juice and vinegar.
Serving Size: makes 6 servings - approx 1 cup per serving
