Introduction

Ingredients

    2 lbs large zucchini sliced lengthwise to resemble lasagna noodles
    1.25 lb package lean ground turkey
    2 garlic cloves minced
    2 cups low fat spagetti sauce
    salt
    1/2 tsp oregano
    2 cups low fat cottage cheese
    2 large eggs- lightly beaten
    cooking spray
    1/2 cup dried breadcrumbs
    2 cups shredded mozerella

Directions

preheat oven to 350 degrees
lightly sprinkle sliced zucchini on both sides with salt- let sit for 15 mins then pat dry with paper towel
lightly brown zucchini slices on hot pan or griddle sprayed with non stick spray- set aside
brown turkey then add garlic and sauce
in seperate bowl combine cottage cheese, eggs, oregano
spray bottom of 3 qt. casserole dish with non stick spray
layer bottom with zucchini
sprinkle with 1/4 cup of breadcrumbs
spread half of cottage cheese mixture over breadcrumbs
then top with half of meat mixture then 1 cup of mozzerella
repeat layers again.
bake in 350 degree oven for 40 mins
put on remaining cup of mozerella
bake another 5 mins
let set to cool for about 15 mins before cutting

Serving Size: yields generous casserole cut into 12 portions
