Ingredients

8 Talapia Filets
8 Plum Tomatoes
1 Red Bell Pepper
1 Green Bell Pepper
1 Yellow Bell Pepper
2 Jalapeno Peppers
1/2 White Onion
2 tsp Cayanne Pepper
3 tbsp Extra Virgin Olive Oil
Directions
Wash Talapia and vegetables
Cut Talapia into bite sizes
-Season with cayanne pepper
-Set aside
Cut tomatoes into slices or cubes
Cut bell peppers into slices (green, red, yellow)
Cut white onion into slices
Cut jalapeno peppers into slices
Add 3 tbsp Olive Oil to pan
Add vegetables to pan when oil is hot
Stir vegetables over medium high heat for about 2 mins
Add Talapia and stir over medium high heat for about 2 mins
Turn heat down to low
Place aluminum foil over pan (do not seal)
Let cook for 15 mins
If you want more of a stew like dish, cook in a pot and cover with lid for remaining 15 mins
Serve over rice or over spinach leaves for a nice salad.
