Ingredients

For crust
2 C sifted all-purpose flour
3/4 C confectioners' sugar
3/4 C butter, softened
1/4 t salt
For filling
4 eggs
1 t baking powder
1/4 C all-purpose flour
1 1/8 C sugar
2 T lemon zest (approx off 4-5 lemons)
10 oz fresh lemon juice (approx. 5-6 lemons)
Directions
1. Preheat oven to 315F. Grease a 9 x 13 inch pan. (Line with parchment paper if you want to easily lift entire tort out of pan after cooking - grease parchment).
2. In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the softened butter. Pour in prepared pan and press with the bottom of a measuring cup.
3. Bake in the pre-heated oven for 15-18 minutes, or until golden. In a large bowl, beat eggs until light (but not frothy). Combine the sugar, baking powder and 1/4 C of flour so there will be no lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice and zest. Pour over prepared crust and return to oven.
4. Adjust temperature to 350F. Bake an additional 20 minutes or until bars are set. Allow to cool completely before cutting into bars. Sprinkle with powdered surgar on top and store covered on counter.
