Ingredients

    2 cups raw Koshihikari Brand, Japanese rice
    228 grams leftover baked ham
    118 grams celery (about 3 stalks)
    95 grams yellow onion, (about 1 medium)
    100 grams fresh mushrooms
    1 garlic clove
    1 large egg

Directions

Prepare rice in rice cooker early in the day or use leftover rice. (Rice must be room temperature for this recipe.) Dice ham into 1/2" cubes. Slice celery stalks into 1/4" slices. Slice mushrooms. Chop onion, and grate garlic clove. In a large skillet, saute ham, onion, celery, mushrooms, and garlic until vegetables are soft. Break one egg into the mixture and scramble the egg, incorporating it with the other ingredients. Add rice and continue to cook over low heat. Mix and stir until rice is thoroughly incorporated with the meat and vegetables. Our family enjoys ketchup or Worchestershire sauce as condiments with this rice dish.
