Introduction

Ingredients

    For crust:
    2 1/2 cup flour
    1 cup butter
    1 tsp. sugar
    1 tsp. salt
    1/4 - 1/2 ice cold water

    Or use frozen pie crusts.

    For filling:
    3 lbs. apples (I use Granny Smith, Macintosh and Gala)
    1 cup whole fresh cranberries
    1/2 cup currants
    1 cup plus 2 TBSP sugar
    2 tsp. pumpkin pie spice
    5 TBSP flour

Directions

Make pie crusts.

Place one crust in pie plate. Pierce bottom with a fork several times.

Position rack in lower third of oven.

1. Roughly chop cranberries with sugar and pie spice (you can quickly zap with blender).
2. Transfer to large bowl.
3. Add apples, currants and flour.
4. Toss well.
5. Add fruit to prepared pie pan.

Top with second crust. I cut out leaves with a cookie cutter and place them to cover the top of the pie.

Crimp edges of pie.

Place pie on baking sheet.
Bake 45 minutes.
Cover pie with foil and continue baking until juice bubbles and crust browns, about 35 more minutes.

Cool 1 hour.
