    Trader Joe's Red Mole Sauce
    onion, 1/2 cup, chopped
    red pepper, 1/2 cup chopped
    chicken breast tenders, 12 oz, cut into chunks
    olive oil, 1/2 T.
    green onions to garnish (optional)


Heat olive oil over med heat, add onions and saute until translucent, add red peppers. Cook until mostly done. Remove from pan (reserve on another plate/bowl). Add chicken and mole sauce and cook until chicken is mostly done, stiring occasionally. Add in reserved vegetables and serve (suggestion: over rice, garnished with green onions). Excellent and super easy! Great for quick weeknight meal.
