Ingredients

    Ground Turkey, 595 grams
    Canned Tomatoes, 400 grams
    Tomato Paste, 0.25 cup
    1 chicken stock cube
    325g mixed beans
    Mixed Vegetables, frozen, 150 grams
    Extra Virgin Olive Oil, 2 tbsp
    Italian seasoning/desired herbs and spices
    1 medium onion
    5-6 cloves garlic

Directions

Cook the beans or use a tinned mix. Chop onion, press garlic. Crush up stock cube and desired herbs and spices together, place in saucepan with 0.5 tbsp of olive oil and fry at medium heat for 2-3 minutes. Add onions and garlic and cook until soft. Add tinned tomatoes and red wine, simmer for 2-3 minutes with stirring. Top up with about the same quantity of boiled water (250mL or so) and let simmer at least 20-30 minutes to maximize the flavours. Add the beans and continue to simmer. In a large frying pan, brown the turkey mince and drain the fat. Add the frozen veg mix and the sauce and cook all together for the length of time it takes to cook pasta.
