Ingredients

    2 cups fresh or frozen corn
    1 cup chopped red ripe tomatoes
    1/2 cup chopped zucchini
    1/2 cup chopped peeled cucumber
    1 red onion, chopped
    1 red pepper, chopped

    Zero Fat Dressing
    Tomato juice, with salt added, 1 cup
    Lemon Juice, 0.5 cup
    Pepper, black, 1 dash
    Parsley, dried, 0.25 tsp
    Garlic, 1 clove
    Mustard seed, yellow, 0.25 tsp


Directions

Cook corn in boiling water about 5 minutes or just until tender. Drain; cool to room temperature. Transfer to large bowl. Add tomato, zucchini, cucumber, onion and pepper. Toss with Zero Fat Dressing. Refrigerate at least 1 hour.
