Ingredients

    Patties:
    Beans, black, .75 cup
    Brown Rice, medium grain, 1.5 cup
    Jalapeno Peppers, 1 pepper
    Hot Chili Peppers, 1 pepper
    Whole wheat flour, .25 cup
    Organic cooking spray, Pam, 4 sprays

    Salsa
    Mangos, 1 fruit without refuse
    Peppers, sweet, red, fresh, 1 medium
    Onions, raw, .25 cup, chopped
    Jalapeno Peppers, 1 pepper
    Cilantro, raw, 2 tbsp
    Lemon Juice, 1 wedge yields
    Lime Juice, .5 lime yields

Directions

1. Preheat oven to 350.

2. Cook rice. Put black beans and peppers through food processor, until it forms a thick paste. Mix rice into paste. (Optional: Add cayenne pepper/spices)

3. Form patties and coat in flour. Spray cooking sheet. Put patties on cooking sheet; spray tops with Pam as well. Bake about 30 minutes, turning every 7-8 minutes.

4. While patties are baking, combine all chopped ingredients for the mango salsa. Stir well, refrigerate for at least 10 minutes before serving.

5. Serve patties warm, top with 1-2 heaping tablespoons of mango salsa.

Serving Size: Makes 6 servings of 1 patty (about 3 oz) with 1/4 cup salsa
