An interesting way to use leftover taco fixin's. An interesting way to use leftover taco fixin's.
Number of Servings: 8

Ingredients

    8 eggs
    1/4 cup milk
    about 8 oz. taco meat (or plain ground beef)
    1 cup black beans
    chopped tomato
    chopped onion
    chopped green pepper (any type depending on your taste)
    1/2 cup chopped or shredded cheddar cheese
    Salsa (topping/garnish)



Directions

Preheat your oven to 350, and grease a round pan or cast iron skillet. Mix eggs and milk, beat well. Add other ingredients and mix, add any spices you like (we added ground pepper, garlic, cumin & chili powder). Pour everything into the pan and bake for 35-45 minutes, check with a toothpick to make sure it's done. You can melt cheese on top too, add that for the last 10 minutes of baking.

Should make 8 pie slices. Serve with salsa.
