Introduction

We have pancakes almost every Saturday and this is a healthy version I came up with for myself, but the truth is my kids love it too! We have pancakes almost every Saturday and this is a healthy version I came up with for myself, but the truth is my kids love it too!

Ingredients

    1/2 cup whole wheat flour (I like King Arthur)
    1/4 cup plain light soy milk
    1 large egg white
    dash baking powder
    dash salt
    1tsp vanilla extract
    1 tbsp organic blue agave nectar
    1/2 tbsp Smart Balance Omega canola soy and olive cooking oil
    dash cinnamon

Directions

Measurements are approximate, and you may need more or less milk to get the right consistency. Mix all ingredients in a medium sized mixing bowl. Spray hot griddle with cooking spray, pour batter onto griddle. Flip when bubbles start to appear. I like to use more of the blue agave on the pancakes instead of pancake syrup or maple syrup. Also, you can play with the recipe and add fruit or whatever you like, or you can make them chocolate pancakes by adding about a tablespoon of nutella to the batter!
