Introduction

Ingredients

    3 tbsp unsalted butter
    3 tbsp flour
    1.5 cups 1% milk
    1.5 oz. low fat cheddar (grated)
    2 cups diced fresh asparagus
    1 tsp olive oil
    2 cups fresh mushrooms (chopped or sliced)
    1 serving Pam cooking spray
    24 medium raw shrimp (peeled and de-veined)
    1 tsp olive oil
    1 tbsp cayenne (or creole/cajun spice)
    9 oz linguine

Directions

Over low-med heat, melt butter, add flour and cook one minute. Add milk and stir until mixture starts to thicken. Add grated cheese and stir to melt. Set aside on warm. Cook asparagus in a separate pan with oil until done but still firm. Cook mushrooms in uncovered pan with Pam until lightly browned. Toss asparagus and mushrooms in warm cheese mixture and toss to coat. Cook shrimp in olive oil and cayenne until thoroughly cooked (pink). Do not overcook. Make linguine according to directions to desired doneness. Toss shrimp into cheese mix and pour over linguine. Serve with a tossed or spinach salad.
