Introduction
A healthy, light pasta dish that will satisfy your senses, as well as your tummy! A healthy, light pasta dish that will satisfy your senses, as well as your tummy!Number of Servings: 4
Ingredients

half a pound of italian sausage (3 links)
half a medium onion
half a large green pepper
3 small zucchini
1 medium summer squash
4 italian roma tomatoes
some fresh herbs - basil, oregano, parsley
1 tbsp olive oil
half a pound of macaroni
Directions
Put on a pot of water for your macaroni
Heat up a large sauté pan on medium
Slice your sausage or remove from casing and break up
Spray the hot pan with cooking spray and add your sausage
Add your macaroni to boiling water with salt to taste... stir and bring back to boil
While that's cooking, slice up your veggies
Stir your sausage until pink color is gone, then add the sliced onions and pepper and toss around... let cool for 2 minutes
Add the zucchini and squash, toss around and cover... cook for 3 minutes
Add the diced tomatoes and any fresh chopped herbs you like, a pinch of salt (optional), toss around, cover and cook for 2 minutes
While that's finishing up, check the pasta and drain when done
Take the pan of sausage and veggies off the heat and drizzle with olive oil
Either add the pasta to the sausage and veggies and toss, or divide the pasta between 4 large bowls and spoon the sausage and veggies on top... sprinkle with a little more fresh herbs or some cheese(optional)
This will make 4 hearty servings
