Ingredients

    4 cups Turkey stock with visible fat removed
    1 cup tap Water
    4 small potatoes, cut in 1/2 inch dice
    2 2/3 cups Yellow Sweet Corn, Frozen
    2 cups Mashed Potatoes
    3 cups cooked turkey breast meat
    3 cups cooked turkey dark meat
    1 1/2 cups Milk 1%
    1 T Corn Starch
    1 T Cajun Seasoning
    1 teaspoon salt

Directions

Add turkey stock, water and diced potatoes to large pot and bring to a boil. Reduce heat to medium, cooking three minutes. Add frozen corn and continue cooking for seven minutes. Test potatoes for doneness. If tender, add the mashed potatoes and stir until dissolved. Add turkey and cajun seasoning and cook until thoroughly heated, about 5 minutes. Mix corn starch to milk and slowly add to pot. Cook for about another 5 minutes. Taste and add salt if desired.

Makes about 18 one cup servings.
