Introduction

This satisfied my husband's pizza craving without gluten. I used leftover rice we had in the fridge. This satisfied my husband's pizza craving without gluten. I used leftover rice we had in the fridge.
Number of Servings: 6

Ingredients

    1 pound boneless, skinless chicken breasts cubed
    1 tsp basil
    1 tsp Italian seasoning
    2 tsp garlic granules
    2 tsp onion granule
    1/4 cup grated Parmesan cheese
    1 can black beans, rinsed and drained
    3 cups cooked brown rice
    1 cup pizza sauce
    1 c shredded cheddar cheese

Directions

Put the seasonings and Parmesan cheese in a bag along with the chicken to coat chicken. In a bowl, mix the rice, beans, pizza sauce and coated chicken. Place in a greased 2 quart baking dish. Cover and bake for 50 minutes. Take off the cover and bake for an additional 15 minutes. Sprinkle cheese over the top and bake for an additional 5 minutes.
