Introduction

Very Simple home made soup made from fresh Vegetables. A good way to get lots of vegetables down with out the extra sodium. Great for those trying to loose weight and need a full feeling. Very Simple home made soup made from fresh Vegetables. A good way to get lots of vegetables down with out the extra sodium. Great for those trying to loose weight and need a full feeling.
Number of Servings: 4

Ingredients

    1 tablespoon olive oil
    4 cloves garlic
    1 cup chopped onions
    1 cup chopped celery
    1 cup chopped carrots
    1/2 cup chopped cabbage
    1/4 cup fresh chopped parsley
    1 teaspoon turmeric
    1 tablespoon sage
    1 tablespoon rosemary
    1 teaspoon thyme
    1 cup cut up cooked chicken
    1 cup chicken broth
    1 can diced tomatoes
    4 cups water

Directions

Heat olive oil in large pot. add chopped garlic, onion, celery, parsley, and seasonings. Lightly saute until all vegetables start to turn tender. Add chicken broth and chicken and heat. Then add the 4 cups water. Cook on stove on low heat for about an hour. Then add the can of diced tomatoes.
Do not add salt. The fresh vegetables, canned tomatoes and broth have enough sodium already.
Serve in large soup bowls and enjoy very slowly. It really fills you up.
Serves 4 if you do large bowls, or 8 if you do small bowls. I have calculated it for 4 servings.
This can also be done over night in slow cooker.
