Introduction

Ingredients

    4 skinless chicken thighs
    4 skinless drumsticks
    3 Tblsp. olive oil
    1/4 cup white flour
    1/2 tsp. salt
    1/4 tsp. pepper
    1 tsp.smoked paprika

    2 garlic cloves, finely chopped
    2 shallots (4 Tblsp.) chopped
    2 tsp. chopped fresh ginger
    21/2 cups Chardonnay wine
    1/2 tsp, fresh thyme leaves
    5 fresh basil leaves
    1 tsp. fresh lemon juice
    4 cups thinly sliced zucchini
    3 large peaches, peeled and sliced into 1/4 inch slices

Directions

Place flour, salt, pepper and paprika in a small plastic or paper bag. Add chicken pieces, one at a time to coat.
Heat olive oil in a large non-stick frying pan. Add chicken pieces and brown on both sides.
Remove chicken from pan and set aside. Add garlic, shallots and ginger to pan, cook stirring for about two minutes. Add zucchini slices to pan and continue to saute for about 2-3 minutes.
Return chicken pieces to pan, add wine, lemon juice and thyme leaves. Cover and cook over medium flame for about 20 minutes.
Add peach slices to pan and continue cooking for 15 minutes. Finely slice basil leaves and add to pan. Cook for 5 additional minutes. Taste sauce and add salt and pepper, as needed.
Delicious over basmati rice.
